1 head cauliflower
3-4 tbsp butter
2-4 tbsp heavy cream
Salt and pepper
Crumbled bacon
Chop the cauliflower into small pieces and rinse under cool water.
Steam in the microwave for 5-7 minutes—until tender. This is longer then I typically steam my veggies—you want the cauliflower to be pretty soft. Add butter, and cream—one table spoon at a time. Using a hand mixer, or food processor, whip cauliflower until it has a mashed potato consistency. Salt and pepper to taste and throw on some crumbled bacon…and YUMMY in my TUMMY!
